Lexi’s Deviled Eggs


This is a favorite that Lexi can make pretty much on her own.

Boil Eggs – place 7 eggs in a sauce pan and cover completely with COLD water, add 1T salt. Bring to a ROLLING boil over HIGH heat. Once the water is brought to a rolling boil, PROMPTLY reduce heat to a lower medium boil and cook an additional 10 minutes for a “hard boiled” egg.

Remove from heat and IMMEDIATELY place eggs under ice cold water. Cooling them with icy water should prevent the dark circles around the yoke. When cooled, peel! Lexi always eats one at this point, so our recipe is for a dozen!

Deviled Eggs -

6 hard-cooked eggs, peeled and cut lengthwise
¼ cup Miracle Whip
½ teaspoon dry ground mustard
½ teaspoon white vinegar
1/8 teaspoon salt
¼ teaspoon ground black pepper
3T Sweet Pickle Relish
Paprika for garnish

Pop out (remove) the egg yolks to a small bowl and mash with a fork. Add other ingredients and mix thoroughly. Spoon the empty egg white shells with the mixture and sprinkle lightly with paprika. Chill and serve. Makes 1 dozen
