Mexican Monday

A friend of mine sent me this delicious recipe that I tried last week. My kids thought it was a little spicy, but they devoured it. Keith and I liked it as well. Thanks Juli!

Mexican Casserole
1 lb hamburger meat/or 1lb chicken breasts or tenders
1 small onion
1 can Ro-Tel Tomatoes
1 can cream chicken soup
1 can ranch style beans
10 tortillas (I will use more next time!)
1 box Velveeta cheese (I used 1/2 of a large box)
1 pkg shredded cheddar cheese
Brown hamburger meat with onion – or – cook chicken and shred. Combine meat, rotel, chicken soup, and beans together. Shred enough tortillas to cover the bottom of a greased baking dish. Cover with half of the meat mixture. Slice enough Velveeta to cover the top of meat mixture. Add more shredded tortillas to cover. Add a second layer of meat mixture. Cover top with shredded cheddar cheese. Bake at 350 apx 30 minutes or until bubbly.

  1. This is one combination of Mexican I have NEVER heard of! Whoa! It sounds bizzarre and yet yummy, though I’d probably do something else besides velveeta. Can’t stomach the stuff.
